Honestly, I don’t really even know where to begin writing this post . . .

With everything that’s going on in the world / COVID-19, my heart is aching, my head is spinning and I just don’t even know what to say?!

Who wants pancakes?!

Not just any ol’ pancakes, light and fluffy, subtly sweet, perfectly spiced, secretly healthy, sugar free, choc chip studded sweet potato pancakes!

Guys, these pancakes are next level yum! They’re like delicious little clouds, crispy on the edges, fluffy in the middle, they’re like a warm cozy hug on a plate and something I think we could all do with right about now.

Both hugs and pancakes!

Plus, chocolate (and cinnamon) just makes everything better!

I know I told you just a few weeks ago that pancakes are not something I make very often because of all the whisking and folding and standing and flipping but, since that time I have learned that pancakes are one of spunky husbands favorite foods!

We’ve been married for 14 years, together for 20  . . . how did I not know this?! #wifeoftheyear

Lucky for him and you (AND ME!!) these paleo choc chip sweet potato pancakes are super simple to make!

No whisking, no folding, just blend, stir, pour, flip, drizzle, devour!

A few quick tips before you go get your pancake on;

1 – If you don’t like choc chips are you even real?! But, if in fact you are real and do not like those dreamy little bites of heaven, feel free to leave them out – even without those delicious little morsels, the pancakes are still all kinds of wonderful. You could even sub in some kind of berry – blueberries or raspberries would be amazing here too!

2 – Make your pancakes on the smaller side. They’re easier to flip this way.

3 –  Actually I think that’s it . . .

Just promise me you won’t skimp on the butter or maple syrup . . .

Paleo Choc Chip Sweet Potato Pancakes

Ingredients –

2 eggs – or flax eggs

1/3 cup of mashed (or pureed) sweet potato

1 teaspoon of vanilla

1 Tablespoon of vanilla almond milk  –  or milk of choice

1/3 cup of almond flour/meal

2 Tablespoons of tapioca (arrowroot) flour

2 Tablespoons of protein powder or you can sub extra tapioca/arrowroot

1 teaspoon of cinnamon – I love using cinnamon Before you speak coffee because it adds an extra umph (EMS10 = 10 % off if you want to try)  but you can use regular cinnamon if you prefer

1/4 teaspoon of ground ginger

1 teaspoon of baking powder

1/2 teaspoon of baking soda

A pinch of salt

Choc chips – measure with your heart – I love using Eating evolved dark

Optional add ins-

Collagen for gut health

Method –

1 –  Place eggs, milk, vanilla, and sweet potato in to your food processor or blender and process until smooth, creamy and well combined.

You can just whisk by hand but I find the pancakes turn out lighter and fluffier when you blend the batter – worth the extra washing up if you ask me.

2 – Pour egg/milk mix in to a medium size bowl

3 – Add/sift flours, protein powder cinnamon, baking powder, baking soda and salt then stir to combine.

4 – Add choc chips, give one last stir then set aside for 5 minutes or so to settle and thicken  or while you get your fry pan ready.

5 – Cook over  low heat for 2-3 mins per side, until the top and the edges look slightly dry/set.

6 – Carefully flip and cook for another minute or 2 until cooked through.

7 – Transfer to a wire rack (or directly to your mouth, but careful, they’re hot!!) and repeat until all of your pancake batter has been used up.

8 – Top with toppings of choice (if you haven’t eaten them straight from the fry pan/skillet)
